I had clipped 3 different recipes for beef stroganoff and they are all very similar. I made one last night but they are all pretty much the same.
Season sirloin steaks (or ribeyes) on both sides with salt, pepper, garlic powder and onion powder. In a hot pan with oil, sear steaks on both sides until medium rare. Remove from pan. Add a little more oil and butter and saute mushrooms and minced onions (and minced garlic, optional) until soft and starting to brown. Add some flour and cook for a minute or two. Add some tomato paste and cook another minute. Then add beef broth, brandy (or substitute sherry or white wine), a dash of soy sauce, 1 teaspoon dijon mustard and (dash of Worcestershire, optional). Optional add some thyme. Simmer for a few minutes, add some water if necessary. Season with salt and pepper to taste. Stir in the beef, turn off heat. Off heat- to avoid curdling- stir in some sour cream and (parsley, optional). Serve over buttered egg noodles. You can also try cooking the noodles in the sauce (add more water to the sauce to do this.)
